Stuffed Hamburgers

Let the cream cheese soften for just a little while, then add garlic powder, salt, pepper and finely diced jalapeno. Flatten out 1/8 pound of ground beef into a patty, add half of the cream cheese mixture (spread out over most of the patty, but leave the edges free).  Add another 1/8 pound patty on top and press the edges together.  Sprinkle both sides with salt and pepper or McCormick seasoning.   Repeat for second burger.  Place in a warmed skillet on medium heat and place a lid on top to help it cook all the way through.  After about seven minutes (when it looks mostly cooked) flip and place cheese on cooked side.  Replace lid and cook until completely cooked. My husband prefers to wrap it in a leaf of lettuce, but I enjoy eating it on a salad and add some mustard and sugar free ketchup!
