Ham Fried "Rice"

Leftover ham or a hankering for chinese food?  
Ham fried (cauliflower) rice is a great Keto option - you get all of the flavor and won't even miss the rice.  My kids aren't usually a fan of cauliflower rice, but all of them want seconds with this recipe!
Fry the cauliflower rice with vegetables of choice.  We love peas and peppers, but they are higher carbs then other vegetables.  If you are on a super strict carb limitation, suggested vegetables would be grated or cubed zuchini, broccoli or green peppers.
Scramble eggs and add salt, pepper and a little bit of powdered garlic.  Once the cauliflower begins to be soft (or if using frozen, once it is thawed), make a well in the middle of the cauliflower, cover the area with olive oil and pour in the eggs.
Let the eggs cook for just a couple of minutes (when it starts to get firm, but is not cooked), add green onion and ham and stir altogether.  Add soy sauce and add more salt and pepper if needed.
This recipe really is about taste and personal preference!  If you would like some numbers to start out with: We used five cups of cauliflower rice, a cup of peas, one red bell pepper, two green onions, seven eggs, a cup and a half of ham and three tablespoons soy sauce.
