Why Keto

Three years ago, at over 330 pounds, my husband decided it was time to make a change.   It wasn't as simple as cutting out soda and chips - he didn't eat junk food.  In fact, by most standards, what he ate was pretty healthy.  We cooked at home 90% of the time and most nights we didn't have dessert.  I am sure we ate too much and we definitely had dessert atleast a couple times a week.  We tried to eat what we considered healthier options - whole grain pasta and bread and brown rice, etc., but it wasn't enough.  My husband had been overweight since the second grade and very obese most of our marriage.  He seemed to go up a size in pants every year.  Throughout his life he had tried many diets and while some had temporary success, nothing stuck.  
A friend introduced him to the concept of insulin resistance and trying to keep it from spiking and it sparked his interest - maybe one of the reasons it was so easy for him to gain weight was that he was more sensitive to insulin spikes.  Soon we were off to a conference for even more information and he was determined to start.  I admit - it sounded crazy to me.  How much fat?!  It sounded completely different then what I had been taught was a healthy diet my entire life.  I wanted to support my husband though and if it worked, I could definitely afford to lose some weight too.
The reality was that we ate more vegetables then we used to, we felt much better, it cleared up my small digestive issue, both of our health increased and the weight began to come off.
Three years later, my husband has lost almost 150 pounds!  After about eight months I had lost 20 pounds.  Shortly thereafter I became pregnant and then have been nursing, so have been on a way less strict form of keto (and even went through a period where I didn't eat Keto at all), but except for when I was pregnant, the highest weight I have reached is still 10 pounds less than what I was before!
Keto for us has not been a fad diet that is impossible to maintain, causes yo-yoing and takes over your mind because you are hungry so often and all you can think about is when you get to eat next!  
That is not to say it has been without its bumps - the first Valentine's Day after we started Keto I went to bed crying after our first attempt at making chocolate fat bombs and it not at all being a good dessert I had been keeping my hopes up for.  Hopefully what we have learned and how we have adapted to make Keto work with four children with help others stick to their goal of a healthier life with less bumps along the way!
